
Raw Fettuccine Alfredo Recipe
I’ve had a few requests for this on Facebook, so I thought I’d post it here for a permanent link.
For the record, I am not a proponent of low carb diets. That is a discussion for another post. (But look at all the LONG TERM thought leaders for the low carb diets: what do they look like? Look at the LONG TERM high carb vegans: what do they look like? I’m just sayin’.)
Having said that, this meal is low carb. I eat it after I’ve gotten enough calories for the day, because it’s a pretty low calories meal.

Ingredients
Sauce:
- 1/4 cup pine nuts
- 2 chopped cloves of garlic (or less, to taste)
- Salt (to taste, I try to keep low)
- 1 small zucchini
- Water
- Optional: Basil, Oregano, Parsley,
- chopped chives
Noodles:
- Spiralized zucchini (2-3 medium)
- Optional: jicama for crunchier noodles
Directions
In a blender, combine the chopped garlic, diced zucchini, pine nuts, salt, and seasoning. Pulse the blender and add water as needed to aid the blending. I like mine smooth and thick. After pulsing a bit, you should be able to blend.
Use a spiralizer to create the zucchini noodles. You can also use a potato peeler to make thin, flat noodles, but this takes a bit longer.
Pour the sauce over the noodles. Consume with delight.
